Bywater American Bistro is an American neighborhood restaurant and sister-establishment to Compere Lapin located in the Old No 77 Hotel & Chandlery. Run by James Beard winner Chef Nina Compton, partner Larry Miller and Chef Levi Raines, its menu takes inspiration from the restaurant’s home in a former rice mill with plenty of heirloom and Southern grains. The flavors found here are inspired by regional cultures and ingredients that are raised or caught with care.
Collaborating with Provenance Hotels as co-designer, the space was designed to be similarly unique and thoughtful. A viewing kitchen layout, centering on a custom island and wrap around bar top, showcase the chefs while they work. By designing for intimate seating arrangements and lighting schemes, the dining area becomes a warm retreat from the bustling, contemporary loft spaces adjacent.
